Prepare the Octopus
Clean and rinse the octopus thoroughly under cold water. If the octopus has not been pre-cleaned, remove the beak and ink sac.

Cook the Octopus
In a large pot, bring salted water to a boil. Once boiling, add the octopus and reduce to a simmer. Cook for about 30-40 minutes until tender. Remove from heat and let it cool in the pot.

Prepare the Marinade
In a mixing bowl, combine the white wine vinegar, olive oil, minced garlic, chopped parsley, salt, and black pepper. Mix well to create the marinade.

Marinate the Octopus
Once the octopus is cooled, cut it into bite-sized pieces. Add the octopus to the marinade and toss until well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Serve
Before serving, squeeze fresh lemon juice over the marinated octopus. Garnish with extra parsley if desired.
