Sausage Preparation

    Prepare the Sausage Mixture

    In a large bowl, combine the ground pork, pork fat, minced garlic, orange zest, dried oregano, salt, black pepper, and red wine. Mix well until all ingredients are evenly incorporated.

    Stuff the Sausages

    Rinse the pork casings under cold water and soak them in water for about 30 minutes. Using a sausage stuffer, carefully fill the casings with the meat mixture, being careful not to overstuff. Tie off the ends of the casings.

    Cook the Sausages

    Preheat a grill or frying pan over medium heat. Cook the sausages for about 15-20 minutes, turning them occasionally until they are browned and cooked through.

    Flambé the Sausages

    To flambé, heat a small amount of high-proof alcohol (like ouzo or brandy) in a separate pan until warm. Carefully ignite it and pour it over the sausages while they are still on the grill or in the pan. Allow the flames to subside as the alcohol burns off.

    Serve

    Remove the sausages from the grill or frying pan and let them rest for a few minutes. Serve hot with a side of crusty bread or a fresh salad.
