    Prepare the Lamb

    Preheat your oven to 325°F (163°C). Season the lamb shanks with salt and black pepper.

    Sear the Meat

    In a large Dutch oven, heat olive oil over medium-high heat. Add the lamb shanks and sear on all sides until browned, about 8-10 minutes. Remove the shanks and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 1 minute. Then pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow it to simmer for about 5 minutes.

    Combine Ingredients

    Return the lamb shanks to the pot. Add the broth, thyme, rosemary, and bay leaves. Bring to a simmer.

    Slow Cook

    Cover the pot and transfer it to the preheated oven. Cook for 2 to 2.5 hours, or until the meat is fork-tender.

    Serve

    Remove the lamb shanks from the pot and let them rest for a few minutes. Serve with the braising liquid spooned over the top.
