    Prepare the Beans

    Soak the gigante beans in water overnight. Drain and rinse them before cooking.

    Cook the Beans

    In a large pot, bring the soaked beans and fresh water to a boil. Reduce heat and simmer for about 1 hour or until tender. Drain and set aside.

    Sauté Aromatics

    In the same pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in minced garlic and cook for an additional 1-2 minutes.

    Make the Sauce

    Add tomato paste to the pot and cook for 2 minutes. Then add the canned diced tomatoes, vegetable broth, bay leaves, salt, black pepper, and paprika. Stir well.

    Combine Beans and Sauce

    Add the cooked gigante beans to the sauce. Stir to combine and let it simmer for 15-20 minutes, allowing the flavors to meld.

    Serve

    Remove bay leaves, garnish with fresh parsley, and serve warm.
