    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the rice and cook for another 2 minutes.

    Add Herbs and Seasoning

    Remove the skillet from heat and mix in parsley, dill, lemon juice, salt, and pepper. Let the mixture cool slightly.

    Prepare Grape Leaves

    If using jarred grape leaves, rinse them well in cold water. If using fresh leaves, blanch in boiling water for about 2 minutes until tender. Drain and cool.

    Stuff the Leaves

    Lay a grape leaf shiny side down on a flat surface. Place a spoonful of the filling at the base of the leaf, fold in the sides, and roll tightly to enclose the filling. Repeat with remaining leaves and filling.

    Cook the Dolmathakia

    Place the stuffed grape leaves seam side down in a pot. Add vegetable broth until the dolmathakia are just covered. Place a plate on top to keep them submerged. Cover and simmer on low heat for about 45 minutes.

    Serve

    Once cooked, let them cool for a few minutes. Drizzle with additional lemon juice and serve warm or at room temperature.
