Peel the ripe mangoes, remove the pit, and chop them into small pieces. Measure out 2 cups of chopped mango for the pudding.

In a small saucepan, combine 1 tablespoon of agar-agar powder with 1 cup of water. Heat over medium heat, stirring continuously until the agar-agar is fully dissolved.
