Preparing the Chicken

Step 1: Cut the Chicken
Cut the chicken breasts into bite-sized pieces and season with salt and black pepper.

Step 3: Coat the Chicken
Place the cornstarch in a shallow dish and coat each piece of chicken with cornstarch, shaking off any excess.

Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, fry the chicken pieces in batches until golden brown and crispy, about 4-5 minutes per batch. Drain on paper towels.
Making the Sauce

In a medium saucepan, combine soy sauce, rice vinegar, sugar, sesame oil, minced garlic, minced ginger, red chili flakes, and water. Bring to a simmer over medium heat.

In a small bowl, mix the cornstarch with a tablespoon of water to form a slurry. Add this to the saucepan and stir well until the sauce thickens, about 2-3 minutes.
Combining and Serving

Add the fried chicken pieces to the saucepan with the sauce. Stir to coat the chicken evenly with the sauce.
