Prepare the Beef
Thinly slice the beef sirloin against the grain into strips and marinate with 1 tablespoon of soy sauce, garlic, ginger, salt, and black pepper for about 15 minutes.

Prepare the Vegetables
Dice the carrots and bell pepper. Chop the green onions and set aside. Make sure the peas are thawed if using frozen.

Scramble the Eggs
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Beat the eggs in a bowl, then pour into the skillet. Scramble until fully cooked, then remove from skillet and set aside.

Cook the Beef
In the same skillet, add another tablespoon of sesame oil and increase heat. Add the marinated beef and cook for about 3-4 minutes until browned. Remove beef from skillet and set aside with the scrambled eggs.

Stir-Fry the Vegetables
Add the remaining tablespoon of sesame oil to the skillet. Add the diced carrots and bell pepper, stir-frying for 2-3 minutes until slightly softened. Then add the peas and cook for an additional minute.

Finish and Serve
Cook for an additional 2-3 minutes, adjusting seasoning with salt and pepper to taste. Garnish with chopped green onions before serving hot.
