Method
Cooking the Steak

Season the Steak
Pat the striploin steak dry with paper towels. Season both sides generously with salt and black pepper.

Making the Parmesan Frites

Prepare the Potatoes
Peel and cut the potatoes into long, thin strips (french fry shape). Soak them in cold water for at least 30 minutes to remove excess starch.

Fry the Frites (First Fry)
Heat vegetable oil in a large pot or deep fryer to 325°F (160°C). Drain and dry the potato strips, then fry in batches for about 5 minutes until tender but not browned. Remove and let cool.

Fry the Frites (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches until they are golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels. While hot, toss with grated Parmesan cheese.
Making the Steak Aioli

Combine Aioli Ingredients
In a bowl, mix together mayonnaise, minced garlic, lemon juice, salt, and black pepper until smooth. Adjust seasoning to taste.
