Prepare the broth
In a saucepan, heat the vegetable broth over low heat and keep it warm.

Sauté the base
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent.

Toast the rice
Add the Arborio rice to the skillet and stir for about 2 minutes, allowing the rice to toast slightly.

Add the wine
Pour in the white wine and stir until it's mostly absorbed by the rice.

Incorporate the broth
Begin adding the warm vegetable broth one ladle at a time, stirring frequently, and waiting until the liquid is mostly absorbed before adding more. Continue this process for about 18-20 minutes, until the rice is creamy and al dente.

Add seasonal vegetables
Stir in the seasonal vegetables and cook for an additional 5 minutes until they are tender but still vibrant.

Finish the risotto
Remove the skillet from heat and stir in the grated Parmesan cheese, fresh herbs, salt, and pepper. Adjust seasoning if necessary.

Serve the risotto warm, garnished with extra herbs and cheese if desired.
