Marinating Chicken

Marinate the Chicken
In a bowl, combine soy sauce, mirin, minced garlic, and grated ginger. Add chicken thighs and marinate in the refrigerator for at least 30 minutes.
Breading and Frying

Prepare Breading
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dip each marinated chicken thigh into the flour, then the egg, and finally coat with panko breadcrumbs.

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Fry the chicken thighs until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.
Making Sauce

Prepare Sesame Aioli
In a small bowl, mix mayonnaise with sesame oil and a pinch of salt. Adjust seasoning to taste.
Assembly

Assemble the Sandwich
On the bottom half of each brioche bun, spread a layer of sesame aioli, add a piece of fried chicken, top with lettuce, pickles, and a drizzle of katsu sauce. Place the top half of the bun over and serve with fries on the side.
