Method

Preparation of Pomme Purée

    Cook the Potatoes

    Peel and cut the Yukon Gold potatoes into quarters. Boil in salted water until fork-tender, about 15-20 minutes.

    Make the Purée

    Drain the potatoes and return them to the pot. Add the heavy cream, butter, and salt. Mash until smooth and creamy. Keep warm.

Cooking the Broccolini

    Sauté the Broccolini

    In a skillet, heat olive oil over medium heat. Add the broccolini and sauté for about 3-4 minutes until tender. Season with salt to taste.

Cooking the A5 Wagyu

    Sear the Wagyu

    Heat a skillet over high heat. Season the A5 Wagyu with salt. Sear on each side for about 1-2 minutes for medium-rare. Let rest before slicing.

Making the Merlot Jus

    Prepare the Jus

    In the same skillet used for the Wagyu, add chopped shallots and sauté until translucent. Pour in the Merlot and reduce by half. Add beef stock and simmer until thickened. Whisk in butter before serving.

Plating

    Serve the Dish

    On a plate, place a generous scoop of pomme purée, top with sliced Wagyu, arrange broccolini alongside, and drizzle with merlot jus.
