Brioche Bread

Whipped Brown Butter

Sweet Tarragon Emulsion

Method

Brioche Bread

  1. 1

    Prepare the Dough

In a large bowl, combine the flour, yeast, sugar, and salt. In a separate bowl, whisk together the eggs and warm milk. Gradually add the wet ingredients to the dry ingredients, stirring until combined.

  2. 2

    Knead the Dough

Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let rise in a warm place until doubled in size, about 1-2 hours.

  3. 3

    Shape and Second Rise

Punch down the risen dough, then shape it into a loaf. Place it in a greased loaf pan and let it rise again until it reaches the top of the pan, about 30-45 minutes.

  4. 4

    Bake the Bread

Preheat the oven to 375°F (190°C). Bake the brioche for 25-30 minutes or until golden brown and sounds hollow when tapped. Let it cool before slicing.

Whipped Brown Butter

  1. 5

    Brown the Butter

In a saucepan, melt the butter over medium heat. Continue to cook until it turns golden brown and develops a nutty aroma. Remove from heat and let cool slightly before whipping with a mixer until fluffy.

Sweet Tarragon Emulsion

  1. 6

    Make the Emulsion

In a blender, combine fresh tarragon leaves, egg yolks, lemon juice, and salt. Blend until smooth, then gradually add olive oil while blending until thick and emulsified.
