Striploin Preparation

    Season the Steak

    Generously season the prime striploin steak with salt and black pepper on both sides.

    Sear the Steak

    In a hot skillet, add a little oil and sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Pomme Purée Preparation

    Cook the Potatoes

    Peel and chop the Yukon gold potatoes into uniform pieces. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter, heavy cream, salt, and pepper, then mash until smooth and creamy.

Broccolini Preparation

    Blanch the Broccolini

    Bring a pot of salted water to a boil. Add the broccolini and cook for 2-3 minutes until bright green. Drain and immediately place in ice water to stop cooking.

    Sauté the Broccolini

    In a skillet, sauté the blanched broccolini in a little olive oil for 2-3 minutes until heated through. Season with salt and pepper.

Merlot Jus Preparation

    Make the Jus

    In the same skillet used for the steak, pour in the merlot wine and beef stock. Bring to a simmer and reduce by half. Whisk in the butter and season with salt and pepper to taste.

Plating

    Serve

    On a plate, place a generous scoop of pomme purée, top with the sliced striploin steak, arrange the sautéed broccolini alongside, and drizzle with merlot jus.
