Method
Fingerling Potatoes
Prepare the Potatoes
Preheat your oven to 400°F (200°C). Wash the fingerling potatoes thoroughly and cut them in half lengthwise.
Season and Roast
In a large bowl, toss the halved fingerling potatoes with olive oil, salt, and black pepper until well-coated. Spread them in a single layer on a baking sheet.
Bake
Roast the potatoes in the preheated oven for about 25-30 minutes or until they are golden brown and tender, flipping them halfway through.
Creme Fraiche Dip
Mix the Dip
In a mixing bowl, combine the creme fraiche, lemon juice, chopped chives, and salt. Stir well until all ingredients are fully combined.
Chill
Place the dip in the refrigerator to chill for at least 15 minutes before serving.
Basil Oil
Blend the Ingredients
In a blender, combine the fresh basil leaves, extra virgin olive oil, and salt. Blend on high until smooth and vibrant green.
Strain
Pour the blended mixture through a fine-mesh strainer or cheesecloth to separate the oil from the solids. Collect the basil oil in a small bowl.
Citrus Trout Roe
Prepare the Trout Roe
In a small bowl, gently mix the trout roe with lemon zest and orange zest. This will enhance the flavor and add a citrusy note.
