Directions

  1. 1

    Prepare the Skillet

Preheat your oven to 425°F (220°C). Place a cast-iron skillet in the oven to heat up.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar until well combined.

  3. 3

    Mix Wet Ingredients

In another bowl, whisk together milk, egg, and melted butter until smooth.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced jalapeno.

  5. 5

    Bake the Cornbread

Carefully remove the hot skillet from the oven and add a little butter to coat the bottom. Pour the batter into the skillet and spread it evenly. Bake for 20-25 minutes or until the top is golden brown and a toothpick comes out clean.

  6. 6

    Prepare Maple Butter

While the cornbread is baking, mix together the additional butter and maple syrup in a small bowl until well blended.

  7. 7

    Serve

Once the cornbread is done, let it cool slightly before slicing. Serve warm with maple butter on the side.
