    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the chipotle grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally until thickened. Stir in the smoked Gouda cheese until melted and creamy. Season with salt and pepper to taste. Set aside.

    Cook the Sausage

    In a large skillet, heat olive oil over medium heat. Add the Andouille and Italian sausage, slicing them into bite-sized pieces. Cook until browned, about 5-7 minutes.

    Sauté the Shrimp

    Add the Pacific white prawns to the skillet. Sprinkle the blackening spice over the shrimp and sausage mixture. Cook until the shrimp are pink and opaque, about 3-5 minutes. Stir in sliced green onions and remove from heat.

    Fry the Egg

    In a separate small skillet, fry the organic egg sunny side up until the whites are set but the yolk is still runny.

    Assemble the Dish

    To serve, spoon the smoked Gouda and chipotle grits onto plates. Top with the sautéed shrimp and sausage mixture. Place the sunny side up egg on top and garnish with additional green onions if desired.
