Prepare Jasmine Rice
Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Make Wasabi Aïoli
In a small bowl, combine the mayonnaise and wasabi. Mix well until smooth and set aside.

Prepare Soy Mustard
In another small bowl, mix the soy sauce and Dijon mustard until well combined. Set aside.

Make Kimchee
In a separate bowl, combine bean sprouts, rice vinegar, and salt. Toss to coat the sprouts and let marinate for at least 10 minutes.

Prepare Cilantro Oil
In a blender, combine cilantro and olive oil. Blend until smooth. Strain through a fine sieve if desired.

Serve
On a plate, serve the jasmine rice, topped with seared Ahi tuna. Drizzle with wasabi aïoli and soy mustard, and garnish with housemade bean sprout kimchee. Finish with a drizzle of cilantro oil.
