Prepare the Garlic Mashed Potatoes
In a large pot, bring salted water to a boil. Add potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot. Add butter, heavy cream, and minced garlic; mash until smooth and creamy. Season with salt and black pepper to taste. Keep warm.

Roast the Tomatoes
Preheat the oven to 400°F (200°C). On a baking sheet, toss cherry tomatoes with olive oil, salt, and pepper. Roast in the oven for about 15 minutes or until they start to blister. Remove and set aside.

Prepare the Vinaigrette
In a small bowl, whisk together balsamic vinegar, a drizzle of olive oil, salt, and pepper to taste. Set aside.

Crust the Halibut
Preheat a large skillet over medium heat. Brush halibut fillets with basil pesto on both sides and then coat with spent grain bread crumbs, pressing gently to adhere.
