Chowder Preparation

    Cook the Bacon

    In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon, leaving the drippings in the pot.

    Sauté Vegetables

    In the same pot, add minced garlic, shaved fennel, and diced sweet red pepper. Sauté for about 5 minutes until they begin to soften.

    Add Stock and Corn

    Pour in the fish or seafood stock and add the roasted corn. Bring to a gentle simmer.

    Add Seafood

    Stir in the Alaska seafood mix and let it cook for about 5-7 minutes until the seafood is cooked through.

    Make it Creamy

    Reduce the heat to low and stir in the cream. Add the dry sherry, and season with salt and pepper to taste. Heat through without boiling.

    Serve

    Ladle the chowder into bowls, and top with the crispy bacon. Enjoy!
