Prepare the Basil Aioli
In a food processor, combine mayonnaise, fresh basil leaves, garlic cloves, lemon juice, salt, and black pepper. Blend until smooth and set aside.

Prepare the Salmon
Soak alder wood chips in water for at least 30 minutes. Preheat the grill to medium-high heat. Season the salmon fillets with salt and pepper.

Grill the Salmon
Place the soaked alder wood chips directly onto the grill coals or in a smoker box. Grill the salmon fillets skin-side down for about 5-7 minutes, then flip and grill for another 3-5 minutes until cooked through.

Cook the Bacon
In a skillet, cook the bacon strips over medium heat until crispy. Drain on paper towels.

Assemble the Sandwich
On a slice of focaccia, spread a generous amount of basil aioli, add a piece of grilled salmon, top with crispy bacon, slices of fresh tomato, and romaine lettuce. Finish with another slice of focaccia.
