    Prepare the Au Jus

    In a small saucepan, heat the beef broth over medium heat until simmering. Keep warm.

    Caramelize the Onions

    In a skillet over medium heat, add a bit of oil and sliced onions. Cook slowly, stirring frequently, until onions are golden brown and caramelized, about 15-20 minutes.

    Prepare the Beef

    In a separate skillet, melt the herb butter over medium-high heat. Add the shaved prime beef and cook until just warmed through, about 3-4 minutes.

    Assemble the Sandwich

    Slice the ciabatta rolls in half and toast them lightly. Layer the warmed beef on the bottom half of each roll, add caramelized onions, and top with smoked provolone cheese.

    Melt the Cheese

    Place the assembled sandwiches under the broiler for 2-3 minutes until the cheese is melted and bubbly.
