    Prepare the Biscuits

    Bake or warm the buttermilk biscuits according to package instructions or your favorite recipe.

    Cook the Seafood

    In a pan over medium heat, add a little butter or oil and sauté the shrimp until they turn pink, about 2-3 minutes. Then add the smoked salmon and crab meat, cooking for an additional 2 minutes until heated through.

    Scramble the Eggs

    In a bowl, whisk together the eggs with a pinch of salt and pepper. Pour the eggs into the pan with the seafood and gently stir until the eggs are fully cooked but still soft.

    Make the Lemon Hollandaise

    In a small saucepan, melt 1/2 cup of butter. In a separate bowl, whisk together 3 egg yolks, 1 tablespoon of lemon juice, and a pinch of salt. Gradually add the melted butter to the egg mixture while whisking until smooth and creamy.

    Assemble the Dish

    Place the warm buttermilk biscuit on a plate, top with the seafood and egg scramble, drizzle with lemon hollandaise, and sprinkle with chopped chives.
