    Prepare the Alder Wood Chips

    Soak the alder wood chips in water for at least 30 minutes before grilling.

    Make the Lemon Garlic Vermouth Butter

    In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Stir in lemon juice and vermouth, and season with salt and pepper. Remove from heat and set aside.

    Grill the Salmon

    Preheat the grill to medium-high heat. Place the soaked alder wood chips in a smoker box or wrap in aluminum foil, poking holes in the foil. Grill the salmon fillets skin-side down for about 6-8 minutes per side, basting with lemon garlic vermouth butter.

    Grill the Potatoes

    Toss diced potatoes with olive oil, salt, and pepper. Place them in a grill basket and cook alongside the salmon for about 15-20 minutes, stirring occasionally.

    Grill the Asparagus and Tomatoes

    Toss asparagus and baby tomatoes with olive oil, salt, and pepper. Grill them for about 5-7 minutes until tender and slightly charred.

    Prepare the Avocado Lime Verde

    In a bowl, combine diced avocado, lime juice, chopped cilantro, salt, and pepper. Mix gently and set aside.

    Plate the grilled salmon with the alder grilled potatoes, asparagus, and baby tomatoes. Top with avocado lime verde and drizzle with remaining lemon garlic vermouth butter.
