Slice the Meat
Thinly slice the ribeye steak against the grain into strips.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the bell pepper, onion, and mushrooms. Season with salt, black pepper, and garlic powder. Sauté for about 5-7 minutes or until the vegetables are tender. Remove from skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil. Increase heat to high and add the sliced ribeye steak. Cook for 3-4 minutes, stirring occasionally, until browned and cooked through.

Prepare the Hoagie Rolls
Slice the hoagie rolls lengthwise without cutting all the way through.

Fill the Rolls
Spoon the steak and vegetable mixture evenly into the hoagie rolls.

Add Cheese
Top each filled hoagie roll with 2 slices of provolone cheese.

Melt the Cheese
Place the filled hoagie rolls on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Remove from the oven, let cool for a minute, and serve hot with your favorite condiments.
