Meatballs

    Prepare the Meatball Mixture

    In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until all ingredients are well combined.

    Form the Meatballs

    Shape the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

    Bake the Meatballs

    Preheat the oven to 400°F (200°C) and bake the meatballs for 20 minutes, or until browned and cooked through.

Tomato Sauce

    Sauté the Onion and Garlic

    In a medium saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for another 1 minute.

    Add the Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer and let cook for 15 minutes, stirring occasionally.

    Combine Meatballs with Sauce

    Once the meatballs are done baking, add them to the sauce, and let simmer for an additional 5 minutes to soak up the flavors.

Sub Assembly

    Prepare the Sub Rolls

    Slice the sub rolls in half lengthwise, but do not cut all the way through.

    Assemble the Meatball Subs

    Place a few meatballs on the bottom half of each sub roll. Spoon some tomato sauce over the meatballs and sprinkle with shredded mozzarella cheese.

    Melt the Cheese

    Place the assembled subs under the broiler for 2-3 minutes or until the cheese is melted and bubbly. Serve warm.
