Prepare the Chicken Wings
In a large bowl, combine the chicken wings, salt, black pepper, garlic powder, and paprika. Toss to coat the wings evenly with the spices.

Soak in Buttermilk
Pour the buttermilk over the seasoned chicken wings, ensuring all wings are submerged. Cover and refrigerate for at least 1 hour or overnight for best results.

Dredge in Flour
Remove the chicken wings from the buttermilk, allowing excess to drip off. Place the flour in a shallow dish and dredge each wing in flour, shaking off any excess.
Frying

Heat Oil
In a deep frying pan or a fryer, heat oil to 350°F (175°C). Ensure there is enough oil to submerge the wings completely.

Fry the Wings
Carefully add the flour-coated chicken wings in batches, frying for about 8-10 minutes, or until they are golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Drain
Remove the wings from the oil and place them on a wire rack or paper towels to drain excess oil.

Toss the Wings
For Buffalo wings, place the fried wings in a large bowl and pour the buffalo sauce over them. Toss to coat evenly. For BBQ wings, do the same with BBQ sauce. For Hot BBQ wings, toss with the hot BBQ sauce.

Serve the wings immediately with celery sticks and blue cheese dressing on the side, if desired.
