Prepare the Chicken
Preheat your oven to 375°F (190°C). Flatten the chicken breasts to about 1-inch thickness using a meat mallet. Season both sides with salt and pepper.

Bread the Chicken
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in eggs, and coat with breadcrumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Transfer to a baking sheet.

Add Sauce and Cheese
Pour tomato sauce evenly over the fried chicken breasts. Sprinkle shredded mozzarella and grated Parmesan cheese on top.

Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Slice the sub rolls in half lengthwise. Place a piece of the cheesy chicken on each roll, and top with chopped fresh basil. Serve warm.
