Calzone Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Mix Cheese Filling
In a mixing bowl, combine ricotta, mozzarella, Parmesan, chopped basil, oregano, black pepper, and salt. Stir until well mixed.
Calzone Assembly and Baking

Preheat Oven
Preheat your oven to 475°F (245°C).

Divide Dough
Once the dough has risen, punch it down and divide it into 2 equal portions.

Roll Out Dough
On a floured surface, roll out each portion into a circle about 10 inches in diameter.

Fill Calzones
Place half of the cheese filling on one half of each dough circle, leaving a border. Fold the other half over the filling and press the edges to seal.

Transfer the calzones to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown.
