Preparing the Cannoli Shells

Make the Dough
In a large mixing bowl, combine the flour, sugar, cocoa powder, salt, and cinnamon. Mix well. In another bowl, whisk together the egg and white wine. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
After resting, divide the dough into smaller portions. Roll out each portion as thin as possible (about 1/8 inch) using a pasta machine or rolling pin.

Cut and Shape the Shells
Cut the rolled dough into circles (about 4-5 inches in diameter). Wrap each circle around a cannoli tube, sealing the edges with a little water.

Fry the Shells
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the cannoli shells in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels. Let cool slightly before removing the tubes.

In a mixing bowl, combine the ricotta cheese and powdered sugar. Mix until smooth. Add the vanilla extract and mix well.

Gently fold in the mini chocolate chips into the ricotta mixture until evenly distributed.

Using a pastry bag or a spoon, fill each cooled cannoli shell with the ricotta filling. Be generous!
