Method

Cake

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Mix dry ingredients

In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.

  3. 3

    Combine wet ingredients

In another bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Mix until smooth.

  4. 4

    Make the batter

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Carefully stir in the boiling water until the batter is smooth.

  5. 5

    Bake the cake

Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool the cakes

Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Chocolate Pudding Filling

  1. 7

    Combine dry ingredients

In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt until smooth.

  2. 8

    Cook the mixture

Heat the saucepan over medium heat, stirring constantly until the mixture thickens and begins to boil. This will take about 5-7 minutes.

  3. 9

    Add egg yolks

In a separate bowl, beat the egg yolks, then slowly add a small amount of the hot pudding mixture to temper the yolks. Stir well.

  4. 10

    Combine and finish

Pour the tempered egg yolk mixture back into the saucepan, stirring constantly. Cook for an additional 2 minutes, then remove from heat and stir in the butter and vanilla extract.

  5. 11

    Cool the pudding

Transfer the pudding to a bowl, cover with plastic wrap (pressing it directly on the surface to prevent a skin), and let it cool completely.

Chocolate Ganache Frosting

  1. 12

    Heat the cream

In a small saucepan, heat the heavy cream until it just begins to simmer. Do not boil.

  2. 13

    Melt the chocolate

Place the chocolate chips in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 5 minutes.

  3. 14

    Stir to combine

After 5 minutes, stir the mixture until the chocolate is completely melted and the ganache is smooth.

  4. 15

    Cool the ganache

Allow the ganache to cool at room temperature until it thickens slightly but is still pourable.
