Prepare the Crust
Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Make the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar, mixing until well combined. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.

Combine and Bake
Pour the cream cheese filling over the prepared crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Prepare the Topping
While the cheesecake is baking, prepare the topping by beating together softened cream cheese, powdered sugar, and vanilla extract until smooth. Once the cheesecake is done baking, remove it from the oven and let it cool slightly.

Spread the cream cheese topping over the slightly cooled cheesecake. Refrigerate for at least 4 hours or overnight before serving.
