Prepare the Beef Filling
In a large skillet, heat a small amount of oil over medium heat. Add onions and garlic, sauté until onions are translucent.

Add Seasoning
Add ground beef to the skillet, followed by scotch bonnet pepper, allspice, thyme, salt, and black pepper. Cook until the beef is browned, breaking it apart with a spoon.

Cool the Filling
Once the beef is cooked through, remove from heat and let it cool slightly. If desired, mix in a slice of cheese until melted.

Prepare the Pastry
Preheat the oven to 375°F (190°C). Roll out the puff pastry sheets on a lightly floured surface. Cut into circles about 6 inches in diameter.

Assemble the Patties
Place a spoonful of the beef filling in the center of each pastry circle. Fold the pastry over to create a half-moon shape, sealing the edges with a fork.

Bake
Place the patties on a baking sheet and bake in the preheated oven for 25-30 minutes or until golden brown.
