Prepare the Beef
Finely chop the tenderloin beef with a sharp knife and transfer to a mixing bowl.

Chop the Taggiasca olives and capers, then add them to the bowl with the beef. Mix in Dijon mustard, Worcestershire sauce, salt, and black pepper.

Incorporate Egg Yolk
Gently fold in the egg yolk to the beef mixture, ensuring everything is well combined.

Drizzle Olive Oil
Drizzle the olive oil into the mixture and mix until incorporated.

Prepare Parmigiano Crisp
Grate the Parmigiano Reggiano and spread a thin layer on a baking sheet. Bake in a preheated oven at 180°C (350°F) for about 5-7 minutes until crispy.
