Prepare the Branzino
Preheat your oven to 400°F (200°C). Rinse the branzino under cold water, then pat dry with paper towels. Make 2-3 diagonal cuts on each side of the fish and season with salt and pepper. Drizzle olive oil over the fish.

Prepare the Artichokes
If using fresh artichokes, trim the stems and remove the tough outer leaves. Steam or boil them until tender, about 20 minutes. If using frozen, follow package instructions.

Make the Romesco Sauce
In a blender, combine roasted red peppers, toasted almonds, roasted garlic, red wine vinegar, and olive oil. Blend until smooth. Adjust seasoning with salt if necessary.

Bake the Branzino
Place the prepared branzino on a parchment-lined baking sheet. Bake for 20-25 minutes, or until the fish flakes easily with a fork.

Serve the Dish
Serve the baked branzino hot, accompanied by steamed artichokes, drizzled with salsa verde and romesco sauce.
