Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions, using a rice cooker or stovetop method. Once cooked, allow the rice to cool slightly before seasoning with rice vinegar, sugar, and salt to taste.

Prepare A5 Wagyu
Slice the Snow Aged A5 Wagyu into thin pieces, about 0.5 cm thick. Lightly sear the slices on a hot skillet for about 30 seconds on each side to enhance the flavor, but ensure they remain rare.

On a plate, place a small mound of sushi rice. Top with a slice of the seared A5 Wagyu and a shiso leaf. Drizzle with truffle ponzu sauce for added flavor.
