Pork Shank
Method
Cooking the Pork Shank
- 1
Season the Pork
Rub the pork shank with salt and black pepper evenly on all sides.
- 2
Sear the Shank
In a large skillet over medium-high heat, add a tablespoon of oil. Sear the pork shank for about 4-5 minutes on each side until browned. Remove from heat and place in a slow cooker.
- 3
Prepare the Sauce
In the same skillet, add the minced garlic and chopped onion. Sauté for 3-4 minutes until the onion is translucent. Stir in chicken broth, soy sauce, brown sugar, rice vinegar, and sesame oil. Bring to a simmer.
- 4
Combine and Cook
Pour the sauce over the pork shank in the slow cooker. Cover and cook on low for 6-8 hours or until the meat is tender and easily pulls away from the bone.
- 5
Make the Glaze
Once cooked, remove the pork shank from the slow cooker. Strain the cooking liquid into a saucepan and bring to a simmer. In a small bowl, mix cornstarch with water until smooth, then add to the saucepan. Stir until the sauce thickens to a glaze consistency.
- 6
Glaze the Shank
Brush the thickened glaze over the pork shank and place it under a broiler for 5-7 minutes to caramelize the glaze. Keep an eye on it to prevent burning.
