    Prepare the Crepe Batter

    In a mixing bowl, combine all-purpose flour, mashed potato, milk, eggs, and salt. Whisk until smooth and well combined. Let the batter rest for about 30 minutes.

    Heat a non-stick skillet over medium heat and add a little melted butter. Pour about ¼ cup of the batter into the skillet, swirling to coat the bottom evenly. Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes until golden. Repeat with remaining batter.

    Prepare the Sausage

    While the crepes are cooking, slice the Vietnamese-style sausage into thin rounds. You can choose to pan-fry them in a separate skillet until slightly crispy, if desired.

    Once the crepes are cooked, sprinkle grated Montamore cheese onto each crepe while they are still warm, allowing it to melt slightly.

    Make the Sweet 'n Sour Sauce

    In a small saucepan, combine ketchup, rice vinegar, sugar, minced garlic, and chili flakes. Bring to a simmer over medium heat, stirring occasionally, until the sauce thickens slightly, about 5-7 minutes.
