Pork Belly

    Prepare the Pork Belly

    Start by scoring the skin of the pork belly in a crosshatch pattern. This helps render the fat and achieve a crispy skin.

    Season the Pork Belly

    Rub the pork belly generously with salt and black pepper. Insert garlic cloves into the scores on the skin.

    Marinate

    In a bowl, mix together soy sauce, honey, and rice vinegar. Pour this mixture over the pork belly and let it marinate for at least 2 hours, preferably overnight in the refrigerator.

    Cook the Pork Belly

    Preheat the oven to 160°C (320°F). Place the marinated pork belly in a roasting pan and cover it with aluminum foil. Roast for 2 hours, then remove the foil and increase the temperature to 200°C (400°F). Roast for an additional 30-40 minutes until the skin is crispy.

    Cook the Noodles

    In a large pot, bring 2 liters of water to a boil. Add the egg noodles and cook according to the package instructions until al dente. Drain and set aside.

    Slice the cucumber, carrots, and red onion into thin strips.

    Make the Pickling Solution

    In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar and salt dissolve.

    Pickle the Veggies

    Place the sliced vegetables in a jar and pour the pickling solution over them. Let them sit for at least 30 minutes before serving.
