Thai Fried Rice

Gather all the ingredients and chop the meat, potatoes, and onions.

Prepare the Ingredients

In a large pot, heat the vegetable oil over medium heat. Add the meat and cook until browned on all sides.

Cook the Meat

Add the chopped onion to the pot and sauté until translucent.

Add Aromatics

Stir in the Massaman curry paste and cook for another 2 minutes, allowing the spices to release their aroma.

Incorporate Curry Paste

Pour in the coconut milk and water, stirring to combine. Bring to a simmer.

Add the diced potatoes and let the curry simmer for about 30 minutes, or until the meat is tender and the potatoes are cooked through.

Add Potatoes and Simmer

Stir in the fish sauce, brown sugar, lime juice, and peanuts. Adjust seasoning with salt to taste.

Season the Curry

Serve hot with steamed rice, garnished with additional peanuts if desired.

Wash and slice all the vegetables and protein. Have the ginger julienned and garlic minced.

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Heat the Oil

Add the protein of choice to the skillet and stir-fry until cooked through. Remove from the skillet and set aside.

Cook the Protein

In the same skillet, add ginger, garlic, onion, bell pepper, and carrot. Stir-fry for about 3-5 minutes or until vegetables are tender-crisp.

Stir-Fry the Vegetables

Return the cooked protein to the skillet, add soy sauce, oyster sauce, sesame oil, and season with salt and black pepper. Stir well to combine.

Combine and Season

Finish with chopped green onions and serve hot with rice or noodles.

Gather and prepare all ingredients. Make sure the rice is cold and clumped together.

Add the minced garlic, carrots, and bell pepper to the skillet. Stir-fry for about 3-4 minutes until softened.

Cook the Garlic and Vegetables

If using raw protein, add it to the skillet now and cook until fully cooked through. If using pre-cooked protein, add it in the next step.

Add Protein

Push the vegetables to one side of the skillet. Crack in the eggs and scramble them until fully cooked.

Scramble the Eggs

Add the cooked rice to the skillet along with the soy sauce. Mix everything together, breaking up any clumps of rice.

Combine Everything

Season with salt and black pepper to taste. Stir in the sliced green onions and serve with lime wedges.
