Burger Preparation

Prepare the Black Bean Mixture
In a large bowl, mash the cooked black beans with a fork or potato masher until mostly smooth but still chunky. Add the cooked quinoa, chipotle in adobo, chopped onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Mix well.

Form the Patties
Stir in the whole wheat breadcrumbs until well combined. Divide the mixture into 4 equal portions and shape each portion into a burger patty.

Cook the Patties
Heat olive oil in a large skillet over medium heat. Cook each patty for about 5-7 minutes on each side, until golden brown and heated through.

Prepare the Fries
Preheat the oven to 425°F (220°C). Cut the potatoes into wedges or fries, toss with a little olive oil, salt, and pepper, and spread on a baking sheet. Bake for 25-30 minutes or until crispy.

Assemble the Burgers
Toast the whole wheat buns. Place a lettuce leaf on the bottom half of each bun, add the cooked black bean patty, top with tomato slices, and cover with the other half of the bun.

Serve
Serve the burgers with the baked fries on the side.
