Prepare the Fish
In a bowl, mix flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the beer until the batter is smooth. Dip the catfish fillets in the batter, ensuring they are fully coated.

Fry the Fish
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully place the battered catfish fillets in the hot oil and fry for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Make the Coleslaw
In a large bowl, combine shredded cabbage, fennel, and carrot. In a separate bowl, mix mayonnaise, apple cider vinegar, and dill. Pour the dressing over the vegetables and toss to combine.

Prepare the Tartar Sauce
In a small bowl, combine mayonnaise, chopped capers, and fresh basil. Mix well and set aside.

Plate the fried catfish with a side of fries, apple-fennel coleslaw, and tartar sauce. Drizzle with malt vinegar to taste.
