Prepare the Grits
In a medium saucepan, bring the chicken broth to a boil. Slowly stir in the grits, reduce heat to low, and simmer for about 20-25 minutes, stirring occasionally, until thickened. Stir in butter and cheddar cheese until melted and smooth. Set aside.

Cook the Tasso Ham and Vegetables
In a large skillet, heat olive oil over medium heat. Add diced tasso ham and cook for about 3-4 minutes until browned. Add the diced red bell pepper and minced garlic, cooking for an additional 2-3 minutes until the peppers are tender.

Cook the Shrimp
Add the wild-caught Gulf shrimp to the skillet, season with salt and black pepper, and cook for about 3-4 minutes until the shrimp are pink and opaque. Stir in sliced scallions.

Spoon the cheesy grits onto plates, top with the shrimp and tasso ham mixture, and garnish with additional scallions if desired.
