Prepare the Vanilla Base
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Split the vanilla bean in half lengthwise and scrape the seeds into the mixture, adding both the seeds and the pod. Heat over medium heat until the sugar has dissolved and the mixture is hot but not boiling.

Combine and Cook
Pour the tempered yolks back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

Chill the Mixture
Remove the saucepan from heat. Strain the mixture through a fine-mesh sieve into a clean bowl to remove the vanilla bean pod and any cooked egg bits. Refrigerate the mixture for at least 4 hours or overnight until completely chilled.

Churn the Ice Cream
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the churned ice cream into an airtight container and freeze for at least 4 hours or until firm.
