    Prepare Home Fries

    Dice the potatoes and boil them in salted water for about 10 minutes until slightly tender. Drain and set aside.

    Fry Potatoes

    In a skillet, heat olive oil over medium heat. Add the boiled potatoes, season with salt, black pepper, and paprika. Cook until golden brown and crispy, about 10-15 minutes.

    Prepare Oysters

    In the same skillet, add a little more olive oil if needed. Fry the oysters on each side until golden brown, about 2-3 minutes per side. Remove and set aside.

    Griddle the Tomato

    Slice the large tomato and griddle in the same skillet for 2-3 minutes on each side until slightly charred.

    Poach Eggs

    In a pot of simmering water, create a gentle whirlpool and carefully drop in the eggs one at a time. Poach for 3-4 minutes until the whites are set and the yolks are still runny. Remove with a slotted spoon.

    Toast English Muffins

    While eggs are poaching, split and toast the English muffins until golden brown.

    On each toasted muffin half, layer with a griddled tomato slice, followed by 3 fried oysters, a poached egg, and a generous drizzle of hollandaise sauce. Serve with home fries on the side.
