Prepare the Ingredients
Peel and dice the sweet potatoes. Core and slice the apples. Chop the onion and mince the garlic.

Caramelize the Apples
In a pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced apples and a pinch of salt. Cook until they start to caramelize, about 10 minutes. Remove from heat and set aside.

Sauté the Aromatics
In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent, about 5 minutes.

Cook the Sweet Potato
Add the diced sweet potatoes, grated ginger, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the sweet potatoes are tender, about 15-20 minutes.

Blend the Bisque
Using an immersion blender or a standard blender, puree the soup until smooth. Season with salt and black pepper to taste.

Ladle the bisque into bowls, top with caramelized apples, and a dollop of crème fraîche. Enjoy!
