    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and drain on paper towels, then crumble into pieces.

    Sauté the Mushrooms

    In the same skillet, add sliced mushrooms and sauté until they are golden brown and tender. Remove from heat and set aside.

    Prepare the Vinaigrette

    In a small bowl, whisk together 3 tablespoons of aged sherry wine vinegar, 1 tablespoon of Dijon mustard, and 1/4 cup of olive oil until emulsified. Season with salt and pepper to taste.

    In a large salad bowl, combine the fresh spinach leaves, sautéed mushrooms, crumbled bacon, thinly sliced red onion, and crumbled goat cheese.
