Prepare the Ingredients
Begin by preheating your oven to 375°F (190°C). Rinse the oysters under cold water and set aside. Chop the bacon, onion, red bell pepper, celery, and garlic finely.

Cook the Bacon and Vegetables
In a skillet over medium heat, add the olive oil and cook the bacon until crispy. Remove the bacon and drain on paper towels, leaving the rendered fat in the skillet. Add the onion, red bell pepper, and celery to the skillet and sauté for about 5 minutes until softened. Add the garlic and smoked paprika, cooking for another 1-2 minutes.

Crumble the cooked bacon into the vegetable mixture and stir to combine. Season with salt and black pepper to taste.

Prepare Oysters for Baking
Place the oysters on a baking sheet. Spoon the bacon and vegetable mixture generously over each oyster.

Transfer the baking sheet to the preheated oven and bake for about 15-20 minutes, or until the oysters are cooked through and the topping is slightly golden.
