    Prepare the Bacon

    Lay the thick-cut bacon strips on a large plate or tray in a single layer.

    In a small bowl, mix together black pepper, brown sugar, smoked paprika, garlic powder, onion powder, and cayenne pepper. Sprinkle the seasoning evenly over the bacon strips.

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Once the smoker is ready, drain the wood chips and add them to the smoker. Place the seasoned bacon strips on the smoker rack. Close the smoker and smoke the bacon for 2 to 3 hours, or until it reaches your desired level of smokiness.
