    Prepare the Remoulade

    In a bowl, combine mayonnaise, Dijon mustard, lemon juice, hot sauce, and chopped parsley. Mix well and refrigerate until ready to serve.

    Prepare the Oysters

    In a shallow dish, mix together cornmeal, flour, salt, black pepper, and cayenne pepper. In another bowl, whisk the eggs and buttermilk together.

    Coat the Oysters

    Dip each oyster first into the egg mixture, then dredge in the cornmeal mixture, ensuring they are well-coated.

    Fry the Oysters

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated oysters in batches. Fry for 2-3 minutes on each side, or until golden brown.

    Serve

    Remove the fried oysters and drain on paper towels. Serve immediately with the remoulade sauce on the side.
